Line and grease a loaf tin and preheat the oven to 180C. Sift the flours and cinnamon together. Mash the bananas and add them to the eggs, milk, melted butter and stir well. Combine the flour with the wet ingredients. Bake in the oven for 45 minutes or until the centre of the bread springs back when pushed. Cool and cut. Serve with marscapone, berries and fresh honey.
This makes a really dense, moist banana bread. You can add fewer bananas if you want a lighter version. You can also add a handful of walnuts to the mix for another excellent variation.
