Bring a saucepan full of water to the boil. Reduce it to a simmer and add the vinegar. Gently crack the first egg and get as close to the surface of the water as possible before lowering the contents into the water. Repeat with the second egg. Set a timer for 3 minutes. Toast your bread. Wash the spinach and toss it in a bowl withe apple cider vinegar. Season well. Slice the avo and arrange it on the bread. Top with the spinach. Remove the eggs from the water and drain. Place them on the avo and spinach and season well. Serve immediately.
TIP – If you have some handy, scatter some feta over the top. If you like your eggs hard in the middle poach them for a little longer before removing.
